Manuel Olivier started off growing fruit back in 1990. Today his is a wine-maker specializing in the wines of the Hautes Cotes de Nuit and the surrounding appellations. His HCN Blanc Chardonnay 2012 is the closest I’ve found to being a perfect chardonnay. Golden, round, plenty of lemon-butter flavors, with plenty of acidity to make this a perfectly balanced wine. Perfection!
